This Raspberry Jam recipe came from my Australian mom. She likes to serve this with her scones for lunch or afternoon tea. I hope you enjoy it too.

Raspberry Jam

2 (12 oz.) packets Raspberry
2 1/4 cups sugar
1 lemon (need just juice)


In a cook pot, put raspberries and mash. Add sugar and lemon juice. Cook on a stove until it becomes a little thick.

My mom told me this scones’ recipe. I remember when I was in Australia; she always made this for lunch. We always had it with jam and whipping cream and a nice cup of tea.

Biscuits or Scones

2 1/2 cups self-rising flour
1/4 cup sugar or honey (I used honey)
1 1/2 cups milk
A pinch of salt
Milk (little)


Preheat the oven 425F . In a mixing bowl, put all the ingredients and mix well but do not over mix. Grease your baking sheet and place the dough on the baking sheet. You can scoop the dough in to any sizes you want with a spoon or make dough into individual balls and place them on the baking sheet. Brush with milk before bake it. Bake for 15-20 min or until it is done and top is lightly golden. Serve warm with jam, butter, whipping cream or any butter. It is also good with any soup for lunch or dinner.

Thai cucumber sauce is very good with Kai Satay or Moo Satay. Enjoy.

Thai Cucumber Sauce

1/4 cup sugar
1/4 cup vinegar
1 tsp salt
1 small cucumber
1-2 shallots


Place a pan over medium heat and add vinegar, sugar and salt. Stir until it all melted. Remove from the heat and put the sauce in a bowl. Wait until the sauce cool down then put cucumber and shallots in. Taste and Serve with Satay or whatever desire.

Vegetarian fried rice is good just alone.

Vegetarian Fried Rice

1 cup cooked rice
2 shiitake mushrooms (soaked in water)
1/4 cup edamame (soy beans)
1/4 cup carrot (cut into little square)
1/2 cup tofu (cut into square)
1 egg (optional)
1 tsp sugar
2-3 tbsp soy sauce
2 tbsp vegetable oil


Put shiitake mushrooms in the water until it is soft and slice it thinly. Heat the oil in a pan over medium high heat then add egg, mushroom, tofu, soy beans and carrot. Stir fry. Add rice. Stir fry well. Add sugar and soy sauce. Stir fry until it is cooked. Taste and remove from the heat. Serve.

*** Chicken or pork can be substituted for the tofu, any vegetable.
