Apricot Bread
3 cups sifted flour 3 1/2 teaspoons baking powder 1 teaspoon salt 2 tablespoons soft shortening 4 tablespoons grated orange rind 1 egg 1 cup sugar 3/4 cup milk 3/4 cup orange juice 1 cup finely chopped dried apricots
Sift and measure flour, add baking powder and salt. Beat egg, sugar, and shortening. Stir in milk, juice, rind. Add flour and apricots. Bake in loaf pan at 350F for 70 minutes
