Bacardi Rum Cake
1 cup chopped pecans or walnuts 1 (18 1/2 oz) package yellow cake mix 1 (3/4 oz) package instant vanilla pudding mix 4 eggs 1/2 cup cold water 1/2 cup Wesson oil
Glaze: 1/4 pound butter 1/4 cup water 1 cup sugar 1/2 cup Bacardi dark rum
Garnishes: Cherries Whipped cream Seedless grapes Powdered sugar
Preheat oven to 325F. Grease and flour pan. Sprinkle nuts over bottom of pan. Mix cake ingredients.
Pour batter over nuts in pan. Bake 1 hour. Set on rack to cool. Invert on serving Plate. Prick top. Druzzle and brush glaze evenly over top and sides.
Glaze: Melt butter. Stir in water and sugar. Boil 5 minutes, stirring constantly. Stir in rum. Decorate with whole cherries and whipped cream. Serve with seedless grapes dusted with powdered sugar.
