Bran Muffins

Bran Muffins
1 1/4 teaspoon baking soda 1 1/4 cups whole wheat or white flour 1 1/2 cups bran
One egg 1/4 cup oil 1 teaspoon salt 1/3 cup honey 1/2 cup buttermilk 1 teaspoon vanilla
one 8 oz can of unsweetened crushed pineapple or applesauce.
Optional: currants and chopped dates to taste
Heat oven to 375F.
Dissolve baking soda in 1 cup boiling water. Set aside to cool.
Measure and mix flour and bran.
In large mixing bowl beat egg, oil, salt, honey, buttermilk, vanilla. Beat until blended.
Add pineapple or applesauce to the flour mixture. Add the soda mixture and stir until just blended. Add currants and dates if desired.
Fill muffin cups 2/3 full and bake at 375F for 17 min.
