Ingredients and Recipe Instructions


Bran Muffins

3 mixing bowls, 1 large, 2 medium
2 cups Nabisco 100% bran cereal
1 cup Kelloggs All Bran cereal

1 1/2 cups sugar
1/2 cups margarine
2 eggs

2 1/2 cups flour
2 1/2 cups baking soda
1 teaspoon salt
2 cups buttermilk


1. Mix cereals in medium bowl. Pour 1 cup boiling water over cereal. Mix. Set aside.

2. In large bowl, cream sugar and margarine. Add eggs one at a time. Mix until smooth.

3. In medium bowl, mix flour, baking soda, salt, and buttermilk.

4. Stir flour mixture into sugar mixture, then mix in the moistened cereals.

5. Refrigerate in covered container for at least an hour before baking. Do not stir the batter again. Spoon carefully into muffin tins.

6. Bake at 400F for 20 minutes.

Batter may be stored in refrigerator 5 weeks. Bake as needed, or bake all and freeze.
