Broccoli Soup
2 tbsp olive oil 1/2 cup chopped onion 2 chopped cellery stalks 2 cups diced red potatoes 3 1/2 cups chopped broccoli 1/4 cup white wine 4 cups vegetable stock 1 tsp Dijon mustard Ground black pepper
Heat olive oil in a saucepan over medium high heat then add onion and celery, saute until vegetables are soft. Add white wine and vegetable stock then add potatoes. Reduce the heat a little and covered about 15 minutes. Add brocoli, cook until every is cooked. Trasfer the vegetable mix to a blender and puree its well then return it to the saucepan in low heat. Mix in mustard and little pepper. Serve hot with nice warm bread. Enjoy!
