Brown Rice with Feta Cheese Salad
1 cup cooked brown rice 1/3 cup cooked sweet corn 1/3 cup cooked kidney beans 1/3 cup cooked soy beans (Edamame) 1/3 cup cooked carrot 1/3 cup cucumber (optional) 1/3 cup sweet tomatoes 1/4 cup basil leaves 1/3 slices onions 2-3 tbsp olives oil 1/3 cup Feta cheese (more or less as desire) Salt and pepper
Heat the oil in a pan over medium high heat then add onion, stir-fry for a few minutes until it is soft. Put rice, sweet corn, kidney beans, soy beans, carrot, cucumber, tomatoes, basil, cooked onions and feta cheese in a salad bowl. Mix well. Taste and serve.
