Carrot Cake
2 cups flour 1 teaspoon baking powder 1 teaspoon soda 2 cups sugar 1 teaspoon cinnomon 3 cups shredded carrots 1 cup oil 4 eggs
Cream Cheese Frosting: 2 3oz. packages of cream cheese 1/2 cup softened butter 2 teaspoons vanilla 4 3/4 cups powdered sugar
Preheat oven to 350F.
Combine flour, baking powder, sugar, and cinnamon. Add carrots, oil, and eggs.
Bake at 350F for 30 to 35 min.
Cream Cheese Frosting:
Beat cream cheese, vanilla, and butter. Gradually add 2 cups sugar. Gradually add remaining sugar until frosting is at spreading consistency.
