Chicken Casserole Luncheon Special
1 8 oz. package herb seasoned stuffing (about 3 1/2 cups) 3 cups cubed chicken 1/2 cup butter 1/2 cup flour 1/4 teaspoon salt dash pepper 4 cups chicken broth 6 beaten eggs
Pimento mushroom sauce:
1 cup mushroom soup 1/4 cup milk 1 cup sour cream 1/4 cup chopped peanuts
Preheat to 325 F.
Prepare stuffing as directed. Spread in baking dish. Top with layer of chicken. Melt butter, add flour and sesonings. Add broth. Cook till thick. Stir small amount into eggs first and add to broth mixture. Pour over chicken.
Bake at 325 F for 40-45 minutes. Let stand a few minutes out of oven. Cut in squares. Serve with pimento mushroom sauce. (Mix ingredients for sauce.)
