1 – 1 1/2 cups (almost 1 lb.) of chicken (thinly slices) 3 cups of coconut milk 4-5 slice pieces galangal 1 lemongrass stalks (smashed and slices in pieces) 3 tbsp fish sauce or soy sauce 3-4 kaffir lime leafs 3 tbsp lime juice Fresh chilies (optional—pressed) Cilantro leaves (chopped)
Put coconut milk, galangal, lemongrass stalks in a pot over medium high heat. Cook for 10 minutes or until you can smell the herbs; this will bring out the flavor. Add chicken and cook until chicken is ready. Add Kaffir lime leafs, fish sauce or thin soy sauce, lime juice, and if desired put Thai fresh chilies. Cook for another one or two more minutes. Remove from heat and garnish with fresh cilantro leaves. Taste and adjust to your owe taste. Serve!
