Chicken with Turmeric Soup (Kai Tom Ka-Min)
4 cups chicken, used every parts of chicken and cut in small pieces (Hen preferred) 1 tbsp Tumeric (fresh preferred) 2 stalks lemon grass 1 tbsp shallot 1 tbsp garlic 2 tsp salt 1 tsp sugar 5 cups water 2 tbsp fish sauce
Cut the lemon grass into 2 inches length and smash; also smash garlic, shallot and tumeric. Put water, lemon grass, garlic, shallot and tumeric in a pot over medium high heat then add chicken. Cook until the chicken almost cooked. Add salt, sugar and fish sauce. Taste and serve.
