Cocktail Crab Puffs
1/2 cup water 4 tablespoons butter 1/4 teaspoon salt 1/2 cup sifted flour 2 eggs Dash cayenne pepper
Crab filling: 1 tablespoon butter 2 tablespoons minced onions 3 tablespoons chopped mushroom 1 cup finely chopped crab 1 tablespoon parsley 1 teaspoon salt 1/8 teaspoon tabasco
Preheat oven to 375F.
Bring water, butter, salt, and pepper to a boil. Add flour all at once stirring constantly over low heat until mixture leaves sides of pan. Remove from heat. Add eggs one at a time, beating after each addition unti9l smooth and glossy. Drop by teaspoonfuls on cookie sheet, leaving 1 inch between each. Bake 20 minutes at 375F or until browned and free from moisture. Cool and split.
Crab filling: Melt butter. Saute onions and mushrooms 5 minutes. Stir in crab, parsley, and seasoning. Saute 1 minute. Fill shells with crab.
