Cucumber Raita
1 cup yogurt 1/4 cucumber (slices) 1 tbsp scallions (finely chopped) 1 tbsp fresh ginger (grated) 1/8 tsp turmeric 1/4 tsp ground black peper 1/4 cup coriander leaves (chopped)
Combine everything in a mixing bowl. Mix well and serve. Other vegetables can be substituted or added, such as carrot or radish.
