Eggplant Curry
1 eggplant (Asian eggplant is preferred) 1/2 cup string beans 1 cup slices beef 2 tbsp red Thai curry paste (find at Asian store) 1 can coconut milk 2 tbsp oil 2-3 soy sauce 1/8 tsp sugar
Wash and cut eggplant in to pieces. Place a pot over medium high heat; add oil and curry paste. Stir it until the oil begins to separate out. Add beef and stir-fry for about 5 min. Add coconut milk, eggplant and beans. Cook for a while then add soy sauce and sugar. Cook until it is done. Remove from the heat and Serve.
