Leek & Potato Soup
12oz leeks finely sliced
1oz butter
1 1/2pound potatoes peeled and chopped
3pints chicken stock
salt and pepper
Saute leeks in butter in large saucepan for 5 minutes. Add stock, potatoes and seasoning. Bring to boil and simmer for about an hour or until potatoes are soft. Puree and then serve.
****Add about 3 slices of bacon and saute with leeks if you like.
