Lemon Meringue Pie
1 cup sugar 2 1/2 tablespoons cornflour pinch salt 2 eggs separated 1 cup water 1 tablespoon butter 1/4 cup lemon juice 1/2 tablespoon finely shredded lemon peel 1 tablespoon plain flour 1 pie shell
Combine sugar, cornflour, flour & water. Cook and stir constantly till mixture thickens. Add salt, lemon juice and shredded peel and continue cooking stirring until blended. Beat egg yolks until smooth.Add eggs yolks while stirring constantly then cook for 4 minutes. Add butter and blend well. Remove and let mixture cool. Pour into baked pie shell. Beat egg whites till very stiff, gradually add 1/4 cup sugar and beat till peaks form. Spread over lemon mixture and bake 10 minutes in moderate oven (350F) or until lightly brown on the meringue.
