Li’s Granola Cake
I like granolas but they tend to be too hard for my kids to chew. After some experiment, I came up with this steamed version and I love it! It smells wonderfully wholesome when it first comes out of the steamer.

Li’s Granola Cake
1/2 cup rolled oats 2 Tbsp quinoa 1 Tbsp oat bran 1 Tbsp brown rice meal 1 Tbsp raw sunflower seeds 1 Tbsp raw almond slices 1 Tbsp ground flax seed 1 Tbsp ground black sesame powder 1 Tbsp raisins 1/2 cup light soy milk
1. Mix everything together in a bowl safe for steaming. 2. Steam for 5 minutes, remove from heat but keep covered for another 5 minutes. 3. Let cool a bit (so the cake keeps shape), then cut and serve.
Note: Obviously you can add, delete, and/or substitute these ingredients as you like. I kept this recipe pretty "healthy" but my kids find it too plain. I usually sprinkle extra raisins on top of the mixture before steaming; the raisins come out extra plump and juicy. I also give the kids a little honey on the side for dipping.
