Miso Tofu
1 pound tofu 1 Tbsp. olive oil or canola oil 1/2 medium onion, finely sliced (optional) 1/8 tsp. black pepper 1 Tbsp. miso paste 1 Tbsp. tamari or soy sauce 3/4 cup water 3 dried shiitake mushrooms (optional, it makes the soup very tasty)
Put shiitake mushrooms in water to soak. Cut tofu into cubes, 1 inch cubes. In a pan put oil and saute onion until golden brown. Drain mushrooms and cut into small peices. Add mushroom and tofu in the pan continue to saute. Mix miso with water, pour over tofu. Add soy sauce or tamari and sprinkling black pepper over it, then serve with rice.
