Pad Prik Pla Dug (Stir-fry Catfish with Curry Paste)
3 1/2 cups catfish (cut in pieces) 2 tbsp. Shredded lemongrass 2 tsp. fresh turmeric 1 tbsp. black pepper 1 cup dry chilies 2 tbsp. shallots 2 tbsp. garlic 2 tsp. salt 1 tbsp. shrimp paste 2 tbsp. vegetable oil 1 tbsp. sugar 2 tbsp. lemon grass leaves (or 5 leaves)
Put lemongrass, turmeric, turmeric, black pepper, dry chilies, shallots, garlic, salt, and shrimp paste in a blender. Blend well until it turned into the paste. In a wok put oil over medium high heat then add the mixture paste, cook for 2 to 3 minutes. Add fish and cook for a while then add sugar and lemongrass leaves. Cook until it’s done. Serve with rice and cut fresh vegetable on the side.
