Peanut Sauce
1 tbsp vegetable oil 1-2 tbsp Masaman curry paste 1/2 coriander powder 2 cups coconut milk 3 tbsp soy sauce 2 tbsp brown sugar 5 tbsp tamarind juice or lime juice (can be less or more) 3/4 cup peanut butter
Place a pan over medium high heat and add oil, coriander powder and curry paste; stir it until the oil begins to separate out. Add coconut milk, soy sauce, brown sugar, tamarind juice and peanut butter and heat until sauce begins to thicken. Taste and Serve.
