Penne Pasta Florentine

8 oz. penne pasta, cooked
16 oz. fresh baby spinach
1 red or orange bell pepper, sliced thin
2-3 oz. freshly grated parmesan cheese
salt and pepper
olive oil


Place the cooked pasta in a large skillet (with lid) over medium heat. Drizzle it with olive oil. Add salt and pepper as desired.

Place the fresh spinach over the pasta; sprinkle it with water (2-3 tablespoons).

Cover and steam the pasta and spinach for a few minutes; then add the thinly sliced pepper. Steam (covered) for 2-3 minutes more.

Transfer the pasta mixture to a serving dish, mixing up the ingredients. Top with the freshly ground parmesan cheese, and serve immediately. Serves 4.
