Preserved Egg with Tofu Details
Preserved Egg with Tofu

Growing up, this no-cook dish is a favorite of mine during summer heat. The strong taste of preserved egg is balanced perfectly by the bland tofu. I haven't eaten this in years until recently, after my acupuncturist (Hi Tiffany!) told me preserved eggs are good for me.

Ingredients and Recipe Instructions

Half a container of soft tofu, cut into bite size cubes
1 preserved egg, shell removed and cut into bite size pieces
1 tsp wheat-free tamari sauce
1 handful of bonito flakes
1 Tbsp chopped green onion (optional)

1. Put tofu in the serving plate, add preserved egg pieces, drizzle tamari sauce all over, then sprinkle bonito flakes over everything. Serve.

NOTE: I much prefer bonito flakes over green onion, but my husband (who loves green onion) doesn’t care either way. Bonito flakes are available at Asian markets or health food stores (I got mine at Whole Foods).
