Salmon Fennel Quiche
My friend Andrea Wild gave me this Salmon Fennel Quiche recipe. It was very popular on our Mother's day brunch. Her husband told me that she made this on their 1st date. He always remembered this dish. I hope you enjoy it too.

Salmon Fennel Quiche
2 fennels 1 pizza dough (ready to make) 7.8 oz smoked salmon 10.58 oz sour cream 4-5 teaspoon horseradish 3 eggs Juice of half lemon Pepper
Preheat oven 380. Cut the fennel in small pieces (take the hard piece in the middle of the fennel out.) Bring water in a saucepan to boil and cook the fennel pieces for about 4 minutes. Set aside and let cool down. Roll the dough on a cookie sheet (use parchment paper.) Put the fennel over the dough and top the salmon (make smaller pieces.) Mix sour cream, horseradish, lemon juice, eggs, pepper and pour on top of the dough and bake for about 30 minutes or until it is done. To check if it is done use a fork and poke into the quiche, when the fork comes out clean then it is ready.
