Salmon Fish cut in pieces (approximately 6 pieces)
1 cup green or red bell pepper or mixed
1 can (13.5oz) of coconut milk
1-2 tbsp Thai red curry paste (put more if you like it very spicy and less if you don’t like it spicy)
2-3 tbsp soy sauce
a pinch of sugar

Place a pan over medium high heat, and add 1/4 cup of the coconut milk, add the red curry paste, and stir it until the oil begins to separate out. Add fish and the remaining coconut milk and bell pepper. Let it cook for a while then add soy sauce, and a pinch of sugar. Taste and adjust the taste according to your own. Remove from the heat. Serve with hot rice.
