Shrimp or Crab Casserole
3 packages frozen chopped spinach (or fresh spinach) 1 1/2 can white sauce 1 can tomato soup 1 cup sour cream 1 1/2 pounds shrimp or crab 4 tablespoons sherry 1 1/2 cup grated sharp cheese
3 green onions 1/3 cup chopped parsley Lemon juice
Preheat to 350F.
Cook spinach and drain very well. (Overnight is fine).
Put spinach in Pam-sprayed casserole, like a pie crust, going up sides. Add 1/2 cup grated cheese. Mix seafood with white sauce, soup, sour cream, and sherry. Put in casserole. Sprinkle 3 chopped green onions. Use tops too, and 1/3 cup chopped parsley on top. Squeeze lemon juice over all.
Top with 1 cup grated cheese. Bake 1 hour at 350F.
