Spicy Corn Cake with Cucumber Sauce
2 cups corn 1/2 cups string beans--chopped 4 leaves lime leave--chopped fine 1 teaspoon red curry paste 1 egg 1 teaspoon sugar 1 teaspoon salt Cooking oil for frying
**Cucumber Sauce 1cup diced cucumber 1/2 cup ground roasted peanuts 1/2 cup sugar 1/2 cup white vinegar or rice wine vinegar
Combine, corn, red curry paste, sugar and salt in a mixer bowl. The mixture should be throughly combined after that put string bean and lime leaves in the mixture. Use hands, shape into patties. Set aside on tray until ready to fry. Deep fry in hot oil until light golden brown. Serve with cucumber sauce.
**Cucumber sauce Put sugar and vinegar in the pot and heat. When the mixture comes to a boil, remove from the stove and let it cool. put it into a cup, add cucumber and ground peanuts.
