Spinach Mushroom Quiche
I like to this quiche with spinach and mushrooms. A crustless quiche cuts back on the carbs a bit.

Spinach Mushroom Quiche
6 eggs
Milk (about 1 cup)
3 strips of bacon
1/2 cup of spinach
1/4 cup chopped onion
1/2 cup mushrooms
1 cup grated cheddar
salt
pepper
Cook and crumble bacon.
Beat eggs. Keep one of the eggshells and mix in 12 half-eggshells of milk with the eggs. Add the rest of the ingredients, salt and pepper to taste. Pour into pie plate (no crust). Bake at 350F until done (about 1 hour).
