Thai Spicy Soup "Tom Yum"
1 cup shrimp (any seafood or chicken) ½ cup mushroom (slices) 2 cup water 1 stalks fresh lemongrass, pounded, cut into 1 inch long segments 2-3 sliced fresh galangal 3 lime leaves, shredded 3 tbsp soy sauce 3-4 tbsp lime juice 5-10 Thai chilies crushed (or less or more) Fresh cilantro for garnish
Wash everything. Remove the shrimp shell without removing the tails. Put water to a boil. Add lemongrass, galangal and lime leaves. Bring back to a boil then add mushrooms, soy sauce, and lime juice. Add prawns and fresh chili peppers. As soon as prawns cooked serve garnished with cilantro.
