Upside Down Cake
1 1/3 cups flour 2/3 cups sugar 2 tablespoons baking powder 6 tablespoons margarine 2/3 cups milk 1 egg 1 teaspoon vanilla Fruit 1/3 cup packed brown sugar
Batter: Combine flour, sugar, and baking powder. Add milk, 4 tablespoons of the margarine, egg, and vanilla. Beat on medium speed 1 minute.
Fruit syrup: Combine 1/3 cup packed brown sugar and 2 tablespoons margarine: Melt margarine in baking pan. Stir in sugar and 1 tablespoons water.
Arrange fruit in greased and floured 8 inch by 1 1/2 inch round pan on sugar mixture. Pour batter into pan on top of fruit. Bake 30-35 minutes or till done. Cool on rack 5 minutes. Loosen sides and turn out on platter.
